Just The Way I Like It

What a lovely Sunday.  After all the running around on Saturday, I made no plans for today.  It’s how Sunday was meant to be.

As I published my last post, I was already getting hungry for lunch.  It wasn’t long before I prepared my meal.

Lunch was simple – an almond butter and jam sandwich, cantaloupe, and fresh green beans.  It tasted really good, too.  I loved crunching the raw green beans.  There is nothing like fully stocked fridge!

While enjoyable, lunch did not fill me up.  I munched on an unpictured apple about an hour later.  The apple didn’t cut it either.  I had an appetite that could not be tamed this afternoon.  By 3:00, I made another snack platter.

Cucumber, carrots, hummus, and a few pita chips got me through until dinner.  I am the only one in my family that eats hummus – crazy, right?! Needless to say, we don’t always have it in the fridge.  I remembered to pick some up at the market this weekend.  They had my favorite kind!  I couldn’t wait to dig into the Roasted Pine Nut hummus from Sabra. It’s so creamy and delicious.

My hunger continued to rage into the evening, so I ate an early dinner.

It was the quickest meal I could come up with – chicken salad on a sandwich thin and a sweet potato with cinnamon.  I made the chicken salad myself.  I followed the mayo-free chicken salad recipe from Iowa Girl Eats.

I despise mayo, so I’ve never eaten any chicken, pasta, or potato salad that uses it as a base.  With the substitution of plain Greek yogurt, I fell in love!  This easy meal was exactly what I needed.  My hunger is cured!

Besides eating, I caught up on magazines and read more of my marathon training guide.  I also took a refreshing afternoon nap and went for a walk with my puppy.  After feeling like a starvin’ Marvin all day, I’m not even in the mood for my usual dessert.  My body is happy!  To satisfy my sweet tooth I chose a cold, juicy bowl of fruit.

It’s summah, summah, summah time!  Cantaloupe, watermelon, strawberries, green grapes, red grapes…amazing!  The perfect ending to a lazy day.
