It was a Saturday with Mom.  We had a few errands to run, which turned into a full day of browsing through the mall, grocery, shopping, and the like.

We headed out early, but by the time we reached the mall, my appetite had returned with a vengeance!  I needed food, so we stopped at the first sign of a meal – Friendly’s!  I hadn’t eaten there in ages…and I didn’t want ice cream. When I got the menu, I was immediately drawn to the featured menu – Seven New Salads. I settled on the apple harvest chicken salad.

This salad had mixed greens, carrots, chopped apples, walnuts, and grilled chicken.  It’s normally served with blue cheese, but I have an aversion to that, so I nixed it.  I ordered the dressing on the side.  It was the lite balsamic vinaigrette. Overall, the salad was good.  I was hungry, so I wasn’t being overly picky, but it satisfied me.  Although, I know I could probably recreate this at home with fresher, tastier ingredients.  I wouldn’t go rushing out to Friendly’s for it!  Regardless, it was nice to have a healthy salad option on the menu.

A busy afternoon also requires snacks.  I planned ahead and packed some munchies in my bag.

I crunched carrots throughout the afternoon and broke into the Luna bar a few hours after lunch.  I never leave home without healthy snacks.  There’s nothing worse than getting stuck, hungry…and cranky…without any viable options around.  When a snack attack strikes, be ready!

I enjoyed browsing through the stores this afternoon, but I wasn’t really in a spending mood.  I picked, poked, and put a lot back on the racks.  I did make on exciting purchase!

A FEED bag!  I paid $10 for this bag.  My purchase will feed one child in one school for one year.  A small price to pay for a big impact in the life of a child.  I picked this bag up at Whole Foods.  The bag can be folded and zipped into a small burlap pouch to throw in a fancier purse or you could toss your necessities into the inside pocket and tote it for the day.  It will be perfect for taking to the farmer’s market, grocery store, pool, beach…endless possibilities!

By the time I got home from my day, I was tired and ready for simple, no-fuss dinner.  I went with a brunch theme.

For the entree, I whipped up an omelet and paired it with a garlic toasted sandwich thin.  My delicious omelet contained:

  • 1 egg
  • 1/4 c. liquid egg whites
  • 1 T. water
  • parsley
  • salt and pepper
  • 2 T. shredded cheese
  • fresh, diced and seeded tomatoes
  • fresh, chopped spinach

The brunch theme continued with a fresh fruit plate.

Everything tasted so fresh and left me very content.  I took an evening stroll – 2.5 miles – with Lucy and now we are both ready to rest.  Sweats are calling!

The Friday That Wasn’t

It’s only Thursday.  I repeat, it’s only Thursday!

All day it felt like Friday.  There was some Friday energy buzzing through the hallways at school and it felt like week needed to end.  Sorry.  Not yet.  That’s what tomorrow is for!

I had to get out of the building quickly to make it to my haircut on time.  I had a classic “convenience snack” – Luna bar!

This was the Iced Oatmeal Raisin flavor – one of my favorites.  I like the chewy texture of Luna bars and this variety reminds me of an oatmeal cookie.  I’m not one to turn down a cookie…or a Luna bar under cookie guise!

The hair appointment went off without a hitch.  Just a quick trim and some blonde for summer.  Nothing major, as promised!  It take a little longer than planned, though, which meant dinner got sidelined.  By the time I left the salon, I was stah-ving! I was alone for dinner tonight, so I decided to make like Friday and call Gram.  Believe it or not, she shared my predicament!

It didn’t take long for Gram and I to sit down to dinner at River Falls.  River Falls is a renovated mill on the Blackstone River.  I love the upscale casual environment…and the food!  They consistently provide reliable service and great meals.

Since I was incredibly hungry, I was quick to grab a slice of bread.

It was pretty typical restaurant bread – sliced thin, but still fresh and chewy.  I dipped my slice in olive oil for some flavah!  Gram and I go to River Falls pretty often, so it didn’t take us long to decide on entrees.

I chose the strawberry salad topped with grilled chicken.  It had a nice mix of greens, pecans, and strawberries drizzled in balsamic.  I felt like I got my veggie fill for the night!  I enjoyed every bite!

If today felt like Friday, I wonder how I’ll feel tomorrow?!
