Little Italy Turkey Burgers

Running is my favorite way to unwind after work.  Cooking is a close second.  The problem is this: when I run, I don’t cook.  Since I proclaimed today rest day, I had plenty of time to have fun in the kitchen.  Yay!

I had one package of ground turkey and the innards of my refrigerator to work with.  The result:

Little Italy Turkey Burgers.

Ingredients (for eight small-ish patties):

  • 1 package of lean ground turkey  – I used 93/7.
  • 1 c. onion, finely chopped
  • 2 c. spinach, chopped and wilted
  • 1/2 red bell pepper, roasted and chopped
  • 1/4 c. tomato sauce – I used Newman’s Own Marinara.
  • 2 T. whole wheat bread crumbs
  • 1 T. minced garlic
  • 1 T. chopped parsley
  • 1 tsp. dried basil – Fresh basil would be great, but I was all out!

Directions:

  1. Preheat the oven to 400* and roast your red peppers.
  2. While peppers roast, chop spinach and onion.
  3. Combine all ingredients in a large mixing bowl.
  4. Mix well.
  5. Grill burgers on over medium-high heat.  I grilled mine for about five minutes per side.

Eat and enjoy!

I placed my burger on a toasted sandwich thin and topped it with grilled onions, roasted red peppers, and shredded mozzarella.  It was super tasty!  The burger was juicy and had great flavor from the roasted peppers, basil, and garlic.  So many healthy ingredients packed into one little patty!  I think I’ll crumble one over a salad with balsamic vinegar for tomorrow’s lunch.  I can’t wait to eat another it!

On the side, I had a simple mix of onions, zucchini, and summer squash.  The veggies were drizzled in olive oil and cooked in a foil packet on the grill.  I put them on the heat first because I wanted everything  done at the same time.  It worked. Timing isn’t my best quality, but when I took everything off the grill, it was perfectly ready to eat.

I’m hoping to hit the hay early tonight and start tomorrow with a morning run.  My legs are ready to go!

Cold Day, Hot Soup

According to my students, “it was a real blowy day!” That’s right.  It was blowy.  One little boy was concerned that we should probably come in from recess in case a tornado came.  I told him I thought Emerald City might make a great field trip…we stayed outside.  Gotta live a little!

While standing out there on this blowy day, my dinner plan came to me.  I knew it needed to be something warm, comforting, and simple. I turned to a fabulous Whole Foods recipe for Hearty Minestrone.

My house was filled with glorious smells as this pot bubbled away on the stove all afternoon.  I took inspiration from the above recipe, but I did have to tweak it a bit.

I started with a traditional saute of onions and garlic.

I added Emeril’s Organic Vegetable Stock as a broth base.

After the stock was added, I stirred in a can a tomato sauce, a can of diced tomatoes, and a can of fire-roasted crushed tomatoes.

This soup also had a fantastic blend of chopped veggies, beans, and whole wheat pasta.

It was still steaming hot when I scooped my serving into a bowl.  I couldn’t wait another second!  This might be the best soup I’ve ever made.  You simply cannot get this from a can.  No way, no how! It was amazing.  Even my “meat and potato loving” family couldn’t get enough of the vegetarian meal.  I paired it with crusty Italian bread, which took things to the next level.

With some freshly grated parmesan cheese….to die for!  Look at those chunks of vegetables and beans.  There’s nothing better than a fabulously delicious and nutritious meal to get you over the hump of a long week!
