Short and Sweet

I slept so good last night.  Like a baby!  I love sleeping with the windows open, all curled up under warm blankets…and a puggle. My long walk definitely helped, too.

Feeling good, I decided to go for a short run this morning.  I’ve never been one to workout on an empty stomach, but I tried a different approach to fueling today.  Instead of my usualy mini Luna or 1/2 banana, I just grabbed two Honey Stingers.

These “organic energy chews” provide quick energy – just enough for three miles.  I had enough oomph for the short run, but I wouldn’t fuel with this for anything longer.  Luckily, my stomach of steel can handle eating before running.

The run was really comfortable.  I enjoyed every step – I love that it’s light so early now!  My body felt good and it really helped my mind prepare for another busy day at work.

I came home ready for some real fuel – breakfast!  I went with a giant oatcake.

Oatcakes work well for me  – especially after exercise – because my body loves the extra protein from the egg whites.  I typically eat a small snack (apple or pear) around 10:30 and lunch at 12:30.  I need a nutrient dense breakfast to power me through the morning.  This oatcake included:

  • 1/3 c. quick oats
  • 1/3 c. egg whites
  • 1/2 mashed banana
  • 1 tsp. baking powder
  • cinnamon to taste
  • 1/2 tsp. vanilla extract
  • Topping: 1 T. peanut butter, 1/2 mashed banana, 1 T. maple syrup

The topping was too good! Instead of the usual layering technique, I combined the three ingredients in a small bowl and stirred them together.  They blended into a thick, creamy, maple-y mix of A-MAY-ZING! I was tempted to just eat it with a spoon…but I didn’t want my oatcake to get lonely. So satisfying!

The Upside of Wednesday

There’s an upside to everything.  I wasn’t really looking forward to being away from my kiddos all day, but I made the most of it.  Being out of the classroom gave me a chance to enjoy a leisurely lunch with my colleagues.  Since we were right nearby, we went to one of my favorite spots: Trattoria Express.

I decided on a classic lunch combo:  soup and salad.

I started with the salad.  It was a fresh dark green, leafy mix with red onions, tomatoes, and cukes.  I topped mine with some house made balsamic vinaigrette.  It was so tasty and I only needed a bit.  I usually get the Tuscan Salad, which I love, so I was glad to enjoy just a taste of the yummy dressing!

There were a couple of interesting soup options, but I decided to go with a traditional Italian pasta fagioli.

I sprinkled my bowl with red pepper flakes and parmesan cheese just to kick it up a notch.  I like my soup HOT.  It wasn’t quite hot enough, but I was hungry, so no time for complaints!  Luckily, it had plenty of flavor and was loaded with cannelini beans.

Things continued looking up when we got “dismissed” early.  It was nice to get home and put my feet up for a few minutes.  I must’ve really had kindergarten on the brain because I fixed a very kid-inspired afternoon snack.

Ants on a log, anyone?!  This was tasty.  The cool, crisp celery paired well with the creamy peanut butter and sweet raisins.  No wonder all the kids love it…they know what’s up! Besides, I had to satisfy my nut butter needs.  No nut butter at breakfast means nut butter snacks!

I’m still enjoying the sunshine as I contemplate dinner.  I know meal-planning is key, but it’s not my forte lately…hmmm….what’ll it be?
