The Jar Collection

I have quite the buildup of empty nut butter jars.

If it’s any consolation, there are more empty jars than full in this house.  I am determined to stop purchasing every fancy nut butter that I see.  I am limiting myself to my top-rated peanut butter, Teddie, and the PB & Co. jars that I find at Ocean State Job Lot for $3.  Every once in awhile, I’ll treat myself to Justin’s, but I’m trying to be reasonable.

Anyway, the collection has grown…and I’m all about the empty jar. This morning, I poured a hearty batch of oats into my favorite one.

Basic oats, basic peanut butter – not-so-basic breakfast! The Teddie jars are the best because they’re glass.  I love that.  I can use them over and over again.  Note: Teachers are hoarders of all things recyclable.  I think it’s in the job description. This breakfast hit the spot after a six mile run.  I ventured out into the dark, cold, rainy morning, so I could run at the gym.  I needed warm oats upon my return.

But I didn’t stop there.  I still had two empty jars.  They were sitting on the counter tonight.  It’s chilly and hot, cinnamon apples seemed like a tasty dessert…in a jar! I chopped the apples, sprinkled them with spices, added a few raisins and popped them in the microwave.

FAIL.  Barney Butter jars are not microwave safe.  Sometimes I learn my lessons the hard way.  I almost poured the apples into a bowl, but the melted plastic scared me off.  That can’t be good.

Luckily, I had a Plan B.

I said I was decreasing the nut butter collection.  That does not include Peanut Butter Pie Frozen Yogurt.  Yum!

Vanilla ice cream, peanut butter cups, graham cracker crust.  Heaven in a bowl!  It’s the simple things…

Like a marathon t-shirt.  Just a peek! When this arrived with today’s mail, I immediately put in on and squealed with delight.  The race is sooo close.  I’ll keep eating my peanut butter and frozen yogurt,  preparing for the big day.

What’s your favorite way to eat nut butter? The whole in a jar concept seems limited to the blog world.  I’m down with it, but a classic PB&J is still my favorite!

Learning To Like Leftovers

I hope everyone is having a lovely Saturday!  Despite, the swampy conditions, I’m enjoying.

I’ve already been up for 13 hours!  My sleep was very interruped last night due to the crazy loud thunderstorms.  Lucy didn’t even flinch…beauty sleep is a priority for the puggle! I laid in bed listening for a little while before falling back to sleep.  Still, I wasn’t able to fall into a deep sleep and by 6 am, I was up.  Anytime I can sleep in, I’m up an at ‘em at the crack of dawn!

I puttered my way into the kitchen for a simple breakfast – PB and banana on a sandwich thin.  Perfect pre-run fuel.  The sandwich thin lightened breakfast up a little, which was great before exercise.  I got all geared up for my run….and the rains came!  I didn’t know how long it would last, so I opted to hit the treadmill instead.

My friend, Lolly, met me at the gym for some chatting and treadmill action.  I did a six mile “Kelly run.”

What a fantastic run!  It flew by!  I talked to Lolly the entire time and covered all six miles before I knew it.  It was a nice change to run some intervals.  I love my outdoor runs, but I just run when I’m outside.  It felt good to add something extra to the run this morning.

I came home ready for a snack.

In the bowl, I mixed one container of plain Oikos, one small nectarine, a handful of blueberries, and some Fiber One.  It hit the spot.

After snacking, I was moving pretty slow.  I read blogs, sat on the deck, and chatted with the ‘rents before heading out to run a few errands.  Lunchtime snuck right up on me!

A leftover lunch!

I added last night’s chicken to a garden salad topped with salsa and shredded cheese.  I also grilled a steamed ear of corn that was hanging out in the fridge.  At one time, I refused to eat leftovers.  If was not hot and fresh, I didn’t eat it.  I now realize how ridiculous and wasteful this practice is.  I’m learning to like leftovers by finding fun ways to reinvent them.  My favorite way to enjoy leftovers – create a fun salad. By adding leftovers to a salad, I avoid the rubberizing reheating of the food, I pack in extra veggies, and I enjoy a meal with a whole new flavor!

After lunch, it was time for time for some pampering.

Cute feet!  I finally got those tootsies taken care of!  My last pedicure was in February and those toes were showing some serious wear and tear.  My poor pedicurist had to use some elbow grease to take care of the calluses that were building up, but she still took the time to add a creative touch to my toes.  Very sweet!  Don’t you just love my flip-flop tan?  I call it the “recess tan.”

Time to enjoy the rest of the evening!

What is your favorite way to eat leftovers? Besides salads, I do enjoy hearty meals, like soup and chili, as leftovers.  Making progress!
