The Bright Side

Happy Monday, my loves!  I woke up in a fantastic mood – completely caught up on sleep and full of pep.  Even better, the weather was just right for running!  I went out early and enjoyed a refreshing run.

  • Mile 1 – 8:52/mi
  • Mile 2 – 8:43/mi
  • Mile 3 – 9:02/mi
  • Mile 4 – 8:42/mi
  • Mile 5 – 8:56/mi
  • Mile 6 – 9:02/mi

Average Pace: 8:53/mile

Done and done.  I came home and made something I’ve been longing for…sweet potato pancakes! I think I missed my ‘cakes almost as much as I missed my dog while I was away!

This was one delicious pancake stack.

  • 1/3 c. quick oats
  • 1/3 c. egg whites
  • 1/2 sweet potato – mashed
  • 1 tsp. baking powder
  • sprinkle of cinnamon
  • Topping: PB&Co. Mighty Maple

I savored every bite.  I also drank two cups of coffee.  Feisty girl!

I put my energy to good use, though.  I had to take my mom to the doctor for a minor procedure.  There was some wait time involved, so I brought along plenty of things to do.  I packed my laptop, books, magazines.  I worked diligently all morning.  So productive!  Of course, I also worked up an appetite while I waited.  Luckily, I was able to dig into the depths of my backpack for a snack.  I ate an unpictured Luna bar – Vanilla Almond – and I loved it!  I wish I had a photo to show you the crunchy bits of almonds crusted on top.  It was so tasty!

By noon, Mom was ready to head home – healthy as a horse!  Must be all those healthy meals her crazy daughter’s been feeding her! We got home just in time for lunch and the good eats just kept coming.

First, wheatberry salad.

I provided the greens, dried cranberries, almonds, and balsamic vinegar.  Mazie’s Organics provided the wheatberries.  Actually, I bought their wheatberries.  Nobody’s been knocking down my door with free samples – ha!

This local company is dedicated to making nutritious organic food, serving the community, and preserving the planet.  They cater events and sell their products at local farmer’s markets.  I added 1/2 c. of this mix to my salad.  Impressive!  I’m hoping I can master the art of wheatberries and recreate this on my own.

Lunch didn’t end there.  Today, I got my first taste of Siggi’s.

I’ve read good reviews of their yogurt, but they’re not typically in the budget.  When I saw that they were on sale this week, I picked up a couple.  I tried the orange and ginger flavor first.  Hmmm….thick…very thick and very creamy.

I added a bit of granola for some crunch.  I ate the whole thing.  It wasn’t bad, but I can’t say I would buy this over my usual Oikos or Chobani.  The flavor combo was kind of interesting – tangy and citrus-y with a kick from the ginger.  I typically eat plain yogurt, so maybe I would prefer that.  I just don’t think I’d pay more for it, ya know.  It was worth a try!

It just started raining, but my day continues to look bright!  I am attending my first blogger meet ‘n mingle tonight!  I’m looking forward to chatting with fun ladies and dining at a new-to-me restaurant.  Good times!

It’s my birthday!  I have officially crossed to the other side of 25…I can’t believe I’m 26!  It’s crazy to me.  Time flies!  So many amazing things have happened in my short life.  I’m so grateful for every second!  The past couple of years have been most transformative and exciting:

  • started teaching.
  • joined a gym.
  • learned to cook.
  • lost 50+ pounds.
  • started running.
  • became a blogger.
  • completed a half-marathon.

Through the years, I have been blessed to be surrounded by so many people that fill my days with love and laughter.  So…what will this year bring? I can’t wait to find out!

Of course, a marathon is in the plans.  My birthday started with a rockin’ five miler – the sweatiest run of all time!  This run was very different from any other training run.  Why?  I left my Garmin at home!  Yes.  The stats girl ran Garmin-less.  It’s my birthday!  I just ran free for five hot, humid miles.  I sipped from my Camelbak and enjoyed every step.  Not a care in the world – fabulous!

There was only one way to end the run…

C’mon, Lucy!  Wanna go take a dip? She didn’t want to join me.  Her loss.  I jumped right in, running clothes and all.  How refreshing!

The best part of the morning was my amazing birthday breakfast – the greatest pancake stack ever!

Simple oatcakes taken to a whole new level – bananas, dark chocolate morsels, chocolate peanut butter!  These are a few of my favorite things…

  • 1/3 c. quick oats
  • 1/3 c. egg whites
  • 1 tsp. baking powder
  • 1/2 banana, mashed into the batter
  • 1 T. dark chocolate morsels
  • Toppings: Justin’s chocolate peanut butter, 1/2 mashed banana

Oozing with sweet, sweet chocolate-y goodness in every bite!  Heaven!

After breakfast, my day took a little turn…at the dermatologist. If you’ve been following me for a bit, you know I’ve had some irritating skin issues.  I thought he would check my skin, assess the situation, and offer an expert solution.  That happened…plus much more.  Mole removal?!

See the cute bandage on my shoulder?  Yeah.  Right there.  It was once the location of a questionable mole.  Apparently, today was that mole’s last day with me.  A surprise mole removal on my birthday – boo! Seriously, though, it was my choice to have it removed on the spot.  I’m all for taking a proactive approach to my health.  A few years ago, I had six moles removed – they had pre-cancerous cells – why take a risk?  Wear sunscreen. I am now The Queen of ‘Screen!

Besides, it was nothing a little Starbucks couldn’t handle!

I’m cured!  No birthday blues here.  I’m planning to stay cool and relax the day away before heading out for a birthday dinner tonight.

What’s your favorite way to celebrate your birthday? In my family, the honoree chooses a restaurant and we have a fantastic dinner together.  Since I have a summer birthday, there were many pool parties in my childhood – always fun!
