Happy Monday, my loves! I woke up in a fantastic mood – completely caught up on sleep and full of pep. Even better, the weather was just right for running! I went out early and enjoyed a refreshing run.

Done and done. I came home and made something I’ve been longing for…sweet potato pancakes! I think I missed my ‘cakes almost as much as I missed my dog while I was away!
This was one delicious pancake stack.
- 1/3 c. quick oats
- 1/3 c. egg whites
- 1/2 sweet potato – mashed
- 1 tsp. baking powder
- sprinkle of cinnamon
- Topping: PB&Co. Mighty Maple
I savored every bite. I also drank two cups of coffee. Feisty girl!
I put my energy to good use, though. I had to take my mom to the doctor for a minor procedure. There was some wait time involved, so I brought along plenty of things to do. I packed my laptop, books, magazines. I worked diligently all morning. So productive! Of course, I also worked up an appetite while I waited. Luckily, I was able to dig into the depths of my backpack for a snack. I ate an unpictured Luna bar – Vanilla Almond – and I loved it! I wish I had a photo to show you the crunchy bits of almonds crusted on top. It was so tasty!
By noon, Mom was ready to head home – healthy as a horse! Must be all those healthy meals her crazy daughter’s been feeding her! We got home just in time for lunch and the good eats just kept coming.
First, wheatberry salad.
I provided the greens, dried cranberries, almonds, and balsamic vinegar. Mazie’s Organics provided the wheatberries. Actually, I bought their wheatberries. Nobody’s been knocking down my door with free samples – ha!
This local company is dedicated to making nutritious organic food, serving the community, and preserving the planet. They cater events and sell their products at local farmer’s markets. I added 1/2 c. of this mix to my salad. Impressive! I’m hoping I can master the art of wheatberries and recreate this on my own.
Lunch didn’t end there. Today, I got my first taste of Siggi’s.
I’ve read good reviews of their yogurt, but they’re not typically in the budget. When I saw that they were on sale this week, I picked up a couple. I tried the orange and ginger flavor first. Hmmm….thick…very thick and very creamy.
I added a bit of granola for some crunch. I ate the whole thing. It wasn’t bad, but I can’t say I would buy this over my usual Oikos or Chobani. The flavor combo was kind of interesting – tangy and citrus-y with a kick from the ginger. I typically eat plain yogurt, so maybe I would prefer that. I just don’t think I’d pay more for it, ya know. It was worth a try!
It just started raining, but my day continues to look bright! I am attending my first blogger meet ‘n mingle tonight! I’m looking forward to chatting with fun ladies and dining at a new-to-me restaurant. Good times!
