Pizza and a Puggle

I disappeared yesterday!  I’ll admit, it felt pretty good.  I started my day with a big ol’ stack of pancakes.

I woke up early Saturday morning with raging hunger.  Maybe I didn’t refuel properly after the night race.  These pancakes took care of it though.

  • 1/2 c. quick oats
  • 1/2 c. egg whites
  • 1 banana – 1/2 in batter, 1/2 mashed on top
  • 1.5 tsp. baking powder
  • 1 T. ground flaxseed
  • 2 T. chopped walnuts
  • drizzle of agave

I needed this hearty breakfast in the worst way.  The crunchy bits of walnut were a fabulous addition.  Every bite tasted like the best bite ever. Told you I was hungry!

As Saturday continued on, I got lost in it.  My brain needed a little break, so I didn’t document everything.  I did have a nice day:

  • I went with Mom to complete her second 1.5 mile training run.  She killed it!  I was a proud daughter.
  • The ladies of the Paige family attended a bridal shower for a distant cousin.  It was a lovely afternoon.
  • I spent too much time with Bobby Flay and developed a huge pizza craving!

Saturday TV is not the greatest, so I settled in for some throwdowns – two to be exact – both head-to-head pizza wars.  I was lickin’ my chops by the end.  In fact, I decided that when I go to Chicago in a few weeks, I must locate the best slice of traditional Chicago-style deep dish pie.  I must.

I guess my invitation to the pizza party got lost in the mail.  Instead, I was left with Easy Cheesy Tortilla Pizza.

My pizza didn’t rival anything on The Food Network, but it certainly satisfied my craving and I didn’t have to tip the delivery boy!  I just spritzed a whole wheat tortilla with olive oil before topping it with sauce, cheese, and fresh basil.  I grilled the tortilla pizza for a few minutes, until it had some sweet grill marks and melted cheese.  Yum!  It paired nicely with my spinach salad to create a well-rounded, easy dinner.

Laziness seems to be following me into Sunday…and it’s a good thing.  I woke up this morning and contemplated yoga.  I thought maybe I needed some deep stretching, but then I reviewed my workout log.  I realized my body needs rest, not yoga!  I scheduled rest days during the week, but ended up running with my mom on those days.  Today I will give my body 100% rest.

Lucy loves rest days!  I can already imagine how much stronger I will feel when Week Seven of marathon training gets underway.  I can’t believe I’m already that far into this training plan…so far, so good!

My day started with a super Sunday bowl of oats.

How’s that for the just rolled outta bed look?!  Haha.  I love my puggle!  I also have plans for some farmer’s market browsing, sunbathing, and cooking.  A simple, relaxing Sunday.

A Day for Dad

Happy Father’s Day, Dad!

My mom took this photo of Dad and I last summer.  It really highlights our relationship – lots of laughter!  I am lucky and have a very close relationship with my dad.  He was a stay-at-home dad for a big part of my childhood.  He did things like curl my bangs and take me to the mall.  We have lots of funny memories of times with Dad!

A lot of my qualities – and my looks – are from my dad, too.  He taught me to ask questions, research, and gather information.  He also handed down his sarcastic sense of humor!  I love you, Dad!

So…this morning I asked my dad how he would like to spend Father’s Day.  “At home,” he said.  Works for me!  After yesterday’s fun, a day at home was in order.  I told Dad he could choose the dinner menu and I would cook for him.

With our plans set, I began my day.

I started with a delicious pancake breakfast before yoga.  My pancakes had bananas and flax in ‘em – perfect for powering me through a 75 minute vinyasa flow!

I went back to Siddhani Yoga Studio for their free class this morning.  The crowd was smaller and the class was better than my first visit.  I really enjoyed today’s series of balance poses and hip openers.  It was a great way to begin the day and just what I needed after a busy week.

On the way home, I picked up some iced coffees for Dad and I.  He was super excited about his special treat!  I paired mine with a snack.

Trail mix gave me a boost before joining Mom on some Sunday errands.  We picked up the weekly essentials at Market Basket, visited my grandfather (her dad), and ate a quick Subway lunch.

Lately I’ve had some serious Subway cravings.  I used to hate Subway because I’m not a big sandwich eater, but their Veggie Delight has been calling my name!  I enjoyed every bite of my six inch sub, jam-packed with veggies, shredded cheddar, and buffalo sauce.  It hit the spot!

When I got home, I decided to join my dad in some Father’s Day fun – reading on the couch…

Reading is my dad’s favorite pastime.  Dad chose the empty couch.  I got the dog!  Nothing like relaxing with a 30 lb. puggle on a 90* day!  Lucy just doesn’t want to miss out on anything – silly girl!

Before I knew, it was dinner time.  Dad’s Choice: Barbeque Meatball Kebabs! Yes.  You read that right.  He wanted Barbeque Meatball Kebabs! He found the recipe in a local paper and couldn’t wait to give it a try.  What could I say? It’s Father’s Day!

I got to work putting together the kebabs – meatballs (the frozen ones), green peppers, red peppers, baby red potatoes, and onions.  I also put together some veggie kebabs for myself.  This meal was really simple.  I just put everything on the grill for about 15 minutes, rotating the kebabs every once in awhile.  I brushed the kebabs with BBQ sauce in the last five minutes and VOILA! A meal fit for a dad!

I also made a meal fit for Beck – meatballs aren’t really my thing – which was equally delicious!

My plate included an Al Fresco All Natural chicken sausage – spicy jalepeno flavor – two veggie kebabs and a few extra potatoes.  A surprise thunderstorm kept us inside for dinner – boo! – but everyone was thrilled with their meals.  One of my favorite things about cooking is feeding the people I love.  When they are happy, I am happy.  I’m glad Dad got to enjoy a meal he really wanted.
