They Call It A Crackberry

See that pretty little thing?  She’s my best friend.  My one and only.  We go everywhere together.  The world is a dark, scary place when she is not with me.  It’s sad.  Very, very sad.  Even sadder? Yesterday, I picked this sweet girl up and water came dripping out of the keypad.  Water!  Noooo!  My fingers started fumbling over the tiny keys.  I pressed “L,”  the screen said “Q.”  Uh oh!

So last night was less than stellar.  I hurried through dinner.

A black bean burger, sweet tater fries, and some cukes was all I had time for.  I raced off to Verizon!

In a strange twist of fate, my visit to Verizon went smoothly.  No line, no waiting.  I walked right in and got the help I needed.  Good news: I could get a free replacement.  Bad news: They had to ship it to me.  Boo.  I left with my drippy little phone in hand.  That was last night’s fiasco.  The rest of my evening was pleasantly uneventful.

I woke up early this morning to meet my friend for a run.

Let’s just say, it was a little damp.  I had every intention of hopping on the treadmill and calling it a day, but Lolly had other plans.  She is beginning to train for her first half-marathon, just bought a Garmin, and wanted to have some fun in the rain.  She stood there cheering for me in the downpours last Friday.  Who was I to say no to four miles?

Fun run – Lolly is going to rock that half!  Whenever I run from the gym, I end up socializing.  It’s a given.  A four mile run morphs into a full-blown social hour.  When I finally got home, breakfast called me.

Apple Cinnamon Oats – a nice departure from my usual banana oats.

  • 1/2 c. old-fashioned oats
  • 1/2 c. + 2 T. water
  • 1/2 c. almond milk
  • 1 T. ground flaxseed
  • 1 chopped apple
  • 1 T. raisins
  • 1 tsp. organic brown sugar
  • 1/4 tsp. cinnamon
  • pinch of nutmeg

Directions: Heat apple, 2 T. water, spices and raisins over medium heat until softened.  Add remaining water, almond milk, oats, and flax.  Stir until oats reach desired consistency.  Eat up!

I’m so used to sweet, creamy banana oats, but I really enjoyed the spice in this batch.  I had a bottom of the barrel apple to put to use and this was perfect for it.

Then….the phone saga continued!  The FedEx truck arrived with my replacement.  Yipee!  It came so fast.  I was so happy!  Not so fast, Beck! The syncing, restoring, updating, activating…ugh!  I just spent half a day talking to multiple Verizon and Blackberry support staff.   Lunch was made while on hold.

Yes.  I had yogurt and cereal for breakfast.  I added a banana and 1 T. of chopped walnuts to the bowl.  I also went back for a small scoop of peanut butter.  It was easy, tasted good, and assembled well with one hand!

Of course, the by the time the whole debacle ended, I was ready for dessert.

My mom shared some Mud Pie with me.  *sigh*  I feel better now!

I actually feel bad that I am so attached to a small electronic device.  We are so plugged in as a society.  My grandmother even texts!  There was a time when people lived happily without getting minute-to-minute updates from everyone else.  After awhile, the updates seem to come faster and more frantically.  I find myself checking them while I eat lunch, while I watch a movie, while I’m reading a book.  I need to relax – enjoy the meal, or the movie, or the book – without checking.  I love the internet, the phone, the TV, but this made me think…I need to unplug more often. I think I will!

Do unplug often? I don’t, but it always feels great when I do.

A Seafood Success

The Ocean State.  Home of the freshest seafood, the daily catch.  Every summer I sit on the rocks at Galilee and watch the fishing boats roll in after long day at sea.  The signature odor wafted by and it reminded me of summer.  “I smell the beach!” I would declare as we drove with the windows down.

I treasure my summer memories.  While I always enjoyed my visits to see the boats, I wasn’t the most sophisticated eater.  It took years for me to enjoy some of RI’s finer offerings.  As a little girl, it was fish ‘n chips only – more chips than fish!  I started getting more adventurous in my pre-teen years and ate some clam strips – fried, or course! – no bellies…yuck!  I also began eating red chowder and the true belly bomb – clamcakes!  Do we see a trend here? If you want Beck to try, fry!

In my adulthood, seafood as become less scary to me.  I tiptoed into this new foodie world with baked scrod – a mild, white fish – and a vessel for butter and breadcrumbs.  I realized that I spent more time scraping away butter and crumbs, so I could enjoy the fish fillet.  I’ve since tried many seafood dishes, including lobster, cioppino, grilled calamari, and my favorite…sea scallops.

Last night, I reached the final frontier in my seafood journey.  Time to sear the scallops!

Pan-seared Sea Scallops and Spinach Saute

Ingredients (for two):

  • 8-10 sea scallops – I bought 1 lb. and had a few little guys leftover.
  • 1/2 spaghetti squash, cooked – click for a spaghetti squash tutorial.
  • 1/2 fresh tomato, seeded and diced
  • 2 c. fresh spinach, washed and chopped
  • 1 T. minced garlic
  • 2 T. olive oil
  • sea salt, black pepper to taste
  • parmesan cheese *optional* for sprinkling!

Directions:

  1. In a large saute pan, heat 1 T. olive oil.
  2. Add minced garlic and tomato and saute for a few minutes.
  3. Toss spinach into the mix and let it wilt down.
  4. At the very end, add spaghetti squash until heated through.
  5. Remove this mixture from the pan and set aside.
  6. Heat remaining oil in the pan until it’s almost at it’s smoking point.
  7. Place scallops in the pan and season with salt and pepper.
  8. Let scallops get that nice brown crust on one side (about 2 minutes), then flip.
  9. The scallops will only need a couple more minutes to brown on the other side.
  10. Plate your spinach saute, place hot scallops atop and sprinkle with parmesan cheese.
  11. Enjoy!

I was very proud of my efforts!  The eaters had happy bellies and proclaimed it, “a winner!”  It’s not easier to please seafood eaters in this state.  They have the best right around the corner.  I say, SUCCESS!

And the true success of the evening…

A kiddie cup of chocolate peanut butter cup frozen yogurt – summer sweetness at it’s best!  I have a really hard time digesting “the real thing,” but this frozen yogurt was as close as it gets – so creamy, dreamy, and delicious.  It had tiny peanut butter cups, plus swirls of real peanut butter running through the chocolate ice cream.  Blissful!

Is there any food that you are afraid to prepare? I don’t know why seafood made me so nervous.  It was super simple.  I’ll definitely tackle a few more seafood specialties before summer ends.
