Dinner Fail, Dessert Success

This is one day when complaints about the weather just won’t do.  It’s been all sunshine and summer breezes.  Ha.  That’s a pretty cheesy sentence, but it really is true of the day.  It’s been lovely.

I can’t say that I did anything special to enjoy the day, other than sit outside, breathing the fresh air.  I ate a fine lunch on the deck.

A big ol’ salad, some pepper jack cubes and Kashi cracker crumbs.  Side note: Almost daily, my dad asks, “Anything new for me to read on that blog?”  Well, this is for you, Dad:

Dear Dad,

I’m glad that you are learning to love the healthy foods that I buy for our house.  It’s great that you enjoy snacking on Kashi crackers instead of Doritos.  In fact, I encourage you to eat the last three crumbs in the box rather than putting it back.  After cutting my cubes of cheese, it’s very sad to find a measly pile of crumbs at the bottom of the box.  You can have them and I promise, I won’t get mad.  The crumbs are just a tease.  Thanks for reading that blog!  I love you!

We have this ongoing crumb debate in my house.  I say, eat the crumbs!  Do not leave them for the next guy.  They really don’t make for much of a snack.  So there.

Anyway…my lack of crackers left me feeling snack-y this afternoon.  First, I enjoyed a homemade granola bar smeared with peanut butter.

I must say, I was pretty excited when I discovered these bars in the freezer.  I made them a long time ago and apparently forgot they were there.  Still tasty!

A couple hours later, I decided another snack was in order.  This time, I went with a juicy piece of fruit.

I love oranges.  They may be a lot of work to peel, but they are so worth it.   This orange was full of refreshing, citrus goodness.

I’m glad I had some good snacks because when the dinner hour hit, things started to fall apart.  I decided to tackle whole wheat pizza dough.  I followed a basic recipe, which I won’t share because I wouldn’t recommend it. It was not from a blog. I’m sure my blog friends would have better recipes!

The dough looked good enough.  Then I tried to roll it out…

FAIL!  That’s about as flat as it would go.  Ugh!  I made a mistake.  I know it.  The dough had no elasticity.  It just tore apart.  The family wanted homemade pizza….and I was rendered crust-less!

Enter Mama Mary!

Right before I started firing balls of pizza dough across the kitchen, Mama Mary saved the day.  I always knew she was a good woman.  Next time, Mary won’t have to play second fiddle. I don’t see too many more dough experiments in my future.  Mary’s accomplice, side salad, also kept me calm as I waited for dinner.

The first pie to come out of the oven was Buffalo Chicken.

I enjoyed one slice with my salad…and I waited for more pizza!

Next up – Pepper ‘n Onion Pizza. I was definitely hungry and ended up having another small slice of each before feeling full.  It was worth the wait.  I enjoyed every bite.

For every dinner FAIL, there is a dessert SUCCESS!  One of my loves had a hankering for cannoli.  Since I’m not much of a baker – especially when it comes to fancy Italian pastry - I let the bakery handle this one.  Today, I picked up a couple of cannolis for the family to share.

Decadent and delicious!  Just enough to perk me up at the end of the day.  I feel fueled and ready for six miles tomorrow morning.  Time to put the PJs on!

Farm Fresh Finds

I love farmer’s markets!  I enjoy the whole experience – browsing and chatting with farmers, the vibrant displays and produce, the fresh, homemade baked goods.  Each vendor has such a passion for their product.  It’s contagious!

Yesterday, I went to a new-to-me market in Scituate, RI.  We traveled on country roads to get there.  Such a departure from city living!  It was a small market, but it had many great things to offer.  I have to limit myself to one bag of produce – don’t want anything to go to waste! – and remind myself that I can go back another time.  Such a kid!

I filled my shopping bag with a bunch of kale – first time for this! - tomatoes, broccoli, and wild blueberries.  Everything looked so inviting!

When lunchtime rolled around, I knew I wanted a farmer’s market tomato.  The ripe, juicy fruit (?!)  called me!

I topped a whole wheat pita with sliced tomatoes, fresh basil, and 1/2 T. parmesan cheese.  Just popped it under the broiler for a few minutes and voila! I also made a batch of crisp fries using a local zucchini.

What a lovely afternoon meal!  Sitting under the sun on Saturday afternoon, I savored my flavorful, local finds.  All I needed was  some fruit salad for a sweet finish.

The rest of my day was pretty lazy.  I’m definitely in summer mode – love it!

Apparently someone wanted you to see just how lazy it was…Lucy asked me to lay with her, I swear!

I did manage to freshen up and enjoy a nice night out last night.  Weekends are so fantastic!  Time to enjoy another day.

What is your favorite local food? I love the ripe strawberries, but the season is almost over!  I also get very excited to buy corn on the cob at a local farm stand – so sweet and delicious!
