Sunday started as it usually does…

…with yoga!

I attended a memorial mass and brunch for a very special person who passed away last June.  It was a morning event that I really wanted to be a part of.  I knew my yoga class would not fit into the day, but I woke up with plenty of time for a quick stretch courtesy of Yoga Sculpt.  I browsed through the ExerciseTV selections and settled on this 1/2 hour class.  Led by Maura Barclay, it was a combination of intermediate vinyasas.  She offered plenty of advanced modifications and got me to work up a sweat.  A great way to start the day!

Out of respect for the memorial, I chose not to photograph food this morning.  There was a delicious spread.  I enjoyed sharing a meal with so many of my close friends and family.  I filled a plate with samples of the traditional brunch fare – quiche, home fries, fresh fruit, and “monkey bread.”  Sunday started with love!

After brunch, I returned home for more relaxation.  It was hotter and more humid than I expected, so I threw on my bathing suit and lounged outside.  We have a small above-ground pool in our yard – I won’t be swimming laps in it, but it does the job of cooling me off!

I’ve eaten like a bunny today – lots of greens!  I started with a light lunch.

A big, refreshing salad and a hunk of Rhody Crunch topped with salsa and cheese.  It wasn’t much, but it was just what I needed this afternoon…I also needed a cookie! I have such a sweet tooth, but I usually choose ice cream, chocolate, or pastry…not today! Today, I was in the mood for a cookie.

While out and about after lunch, my momma solved the problem.  She bought a big, beautiful Great Harvest cookie and split it with me.  It was crisp, buttery and everything a cookie should be.  This was their pecan cookie – oatmeal raisin with pecans.  I became the cookie monster and showed this bad boy who was boss!  Thanks, Mom!

Laziness ensued for the remainder of the day.  I have lots of projects planned for myself, but I’m sticking to a traditional schedule.  Save the work for weekdays!

I’m going green! I tackled kale chips for dinner.  It was my first time trying kale.

They were super simple to make – I followed Kath’s recipe – and palate pleasing.  I paired my chips with a delicious sweet potato black bean burger.

The crisp chips were the perfect compliment to the dense burger, which was just my usual black bean burger mixture combined with 1/3 c. mashed sweet potato.  Love!

I convinced Lucy to go for a walk after dinner.  Seriously, I had to work my angles…she hates the heat! We walked about two miles and now I have one panting puppy.  I’m off to refill the water bowl and tuck in my pup!

Have you tried any new foods lately? I try to be careful not to buy too many new things at once – especially produce – because I can’t use it up quick enough.  This week it was time to try kale…I loved it!
