The Last Day

I made it!  Another year done.  Another group of students moving on.  The last day of school is so bittersweet.  I am excited for summer vacation and the mental break, but it’s hard to say goodbye to my babies.  They aren’t babies anymore.  First grade – I hope you are ready!  Here they come!

My classroom is empty.  My basement is full.  The packing is done!  Today we will share in a day of fun – shaving cream, ice cream.  The things kids dream of!  It should be good.

Let’s back up a bit…

I wrapped up with packing yesterday afternoon.  The busy day called for a filling snack.

Plain Oikos, Kashi Heart to Heart, and strawberry jam.  Mmmm…mmmm….good! This snack filled me up for quite awhile.

Meal planning got lost in the shuffle of the busy week, so it was every man for himself at our house last night.  I didn’t have any cravings and just wanted something quick and easy.  I had parsnips and butternut squash to use up, so I made fries.  Perfect for pairing with baked beans.

While my fries crisped in the oven, I sat on the deck with a fresh, green salad.  Love the side salads!

I was a feisty and pulled the fries out of the oven a few minutes later.

Boring!  I didn’t let the fries get crispy enough and I wasn’t really feeling the baked beans.  The heat and humidity only made it worse.  Nothing appealed to me.  Oh well!  Their is a bright side – I had extra time to rush off to yoga at the gym.

I really wanted to stretch last night and Kathy (the instructor) made sure to take care of all my tight spots.  Hello, hips ‘n hamstrings!  Yoga felt great.  I was so settled when I left…but I needed chocolate! Hello, hormones!

I came home and made my signature hot apple snack, but I added a few dark chocolate chips to the mix.

Bad picture, good food!  Sometimes a girl just needs some chocolate…and chocolate goes with everything!  Yes, even apples.  I loved my snack and went to bed with a happy belly.

More oats for breakfast – I’ll spare you the photo.  I have no workout plans for today.  We have an End of the Year Staff Party after school.  I don’t want to feel rushed to leave or anything, so no pressure for a workout.  I’d rather just enjoy an evening walk with Lucy when I get home.

Happy Hump Day! It doesn’t feel like Wednesday to me…it’s the last day of school! I’m worse than the kids.

Good Night, Good Morning

I had a good night.

It started with a delicious Italian fest, Beck-style!  I know this isn’t how they do it in the old country, but change is good. Last night I made a meat sauce using ground turkey, but instead of traditional pasta, I served the sauce on a bed of veggies.  On the bottom, spaghetti squash.  In the middle, fresh baby spinach.  On the top, sauce and shredded cheese.  Divine!  Italian dinners are my favorite and the flavors on my plate rivaled any of the classics.

Dinner was eaten fairly early, so I could digest and make it to yoga!  It’s been a long time and I needed it.  I didn’t venture off to the studio, though.  I opted for the gentler yoga session at my gym.  Hot power yoga is my love, but the gym’s class is perfect for a great stretch when I’ve already worked out in the morning.

This morning was good, too.  For breakfast…

No, silly!  I didn’t eat candy for breakfast!  My oats were inspired by this decadent treat.

I started with a traditional batch of oats.

  • 1/2 c. old-fashioned oats
  • 1/2 c. almond milk
  • 1/2 c. water
  • 1/2 banana, sliced
  • 1 T. ground flaxseed

I added my steaming hot oats to an empty jar of Dark Chocolate Dreams and I cranked in some sea salt.  Perfect!  All the flavors of my favorite treat in meal form.

I must say, I missed the morning run.  I am trying to stick to the plan and run 4x/week, but those morning runs really get me going.  I love starting my day that way and woke up with enough time to hit the pavement.  This morning, I forced myself to stay in bed.  I’m definitely a morning person and I’ve come to cherish those quiet hours for exercise.  It’s hard to believe I didn’t start morning workouts sooner.  Looks like I’ll be hitting the gym this afternoon!

What is your favorite indulgence? I recently discovered Lindt’s “Touch of Sea Salt” bar and I’m in love.  I like to break off little pieces to enjoy after meals.  It makes the bar last forever and I can savor ever morsel!
