A Kids’ Meal

It was raining when I left work.  I’m really glad I went for a morning run!  Since I didn’t have a workout planned, I had fun with popcorn.

Two years ago, I would’ve come home and popped a bag of Butter Lover’s Microwave Popcorn…and eaten every last kernel. I would then use my finger to scrape every last bit of salty, fake butter from the side of the bag.  The thought of doing that now just makes my stomach turn.  Microwave popcorn scares me a bit, so I avoid it most of the time.  Instead, I go for air-popped kernels.  Popcorn is a great natural, whole grain, high fiber snack.  It’s especially good medicine for a case of the munchies!

My afternoon snack took just as long as the microwave version.  I poured 2 T. of popcorn into the popper and let it go.  Within minutes beautifully puffed up pieces were jumping into my bowl.

I topped my popcorn with 1/2 T. of parmesan cheese and some chili powder.  Another snack bites the dust!

Forget Ronald, Beck McDonald ran the kitchen tonight.  I made a great kids’ meal - nuggets and fries!  The only ingredient missing was the kids.

The nuggets. Into a ziploc, I threw:

  • 3/4 c. whole wheat bread crumbs
  • 1 T. parmesan cheese
  • a sprinkle of cayenne pepper

I cubed 2 lbs. of chicken breast, dipped the chunks in skim milk and added them to the bag.  Shake, shake, shake! I spread the nuggets onto a cookie sheet and baked at 375* for about 25 minutes.

The fries. These were hand cut – oh yeah! I cut some large russets (enough to feed my hungry family!) into fries and coated with canola oil.  I seasoned the fries with black pepper, garlic salt, and dried rosemary.  I cranked the oven up to 450* and baked these for about 20 minutes.  I flipped them frequently to keep the crisp even.

I included a little of everything, plus some extras on my plate.

Five nuggets, 1/2 a sweet potato, asparagus spears, and a few fries…all with some BBQ sauce for dipping.  I loved everything about this meal.  I got a taste of everything I was craving and it was a good taste!

I ate dinner early so I could digest in time for…YOGA!  It’s time for me and yoga to rekindle our relationship.  It’s been way too long and I need a good stretch in a bad way!  Downward dog, anyone?!

What’s your favorite “kid food?” Nuggets and fries are perfect for dunking into my favorite BBQ sauce.  I can’t resist.
