Bad Apples, Good Pancakes

Thanks for all the great shoe advice!  Looks like these sweet kicks will get their last hurrah on Sunday.  It’s only right to give them a chance to race after all their hard work.  I knew you wouldn’t steer me wrong!  That’s one of the great things about blogging!

I needed break last night…so I took one.  It’s taper time, after all.  I soaked in epsom salts, did some work, and watched the Housewives duke it out.  It was perfect.  I love to just sit back and watch the drama, keeping it at a safe distance!

Friday breakfast time! It’s another good one – apple cinnamon oatcake.

This was a problem solver’s breakfast.  The problem: bad apples.  I bought a batch earlier in the week and they were just plain nasty! I bit into one yesterday and it was bruised, mushy, and mealy inside.  Apples should be crisp and juicy, never mushy or mealy.  I couldn’t let all those apples go to waste.  The solution: heat ‘em up.

The cinnamon apples:

  1. Chop one apple into bite -sized chunks.
  2. Sprinkle with cinnamon and 1 tsp. of brown sugar.
  3. Microwave for 2 minutes, stirring once.

The apples got soft and syrupy sweet.  They made the perfect topping for a basic oatmeal pancake.

The oatmeal pancake:

  • 1/3 c. quick oats
  • 1/3 c. egg whites
  • 1 tsp. baking powder
  • sprinkle of cinnamon

Combine the above ingredients, pour batter onto a non-stick griddle and cook it up.  Top the pancake with the apples and you have one tasty breakfast!  I added a dollop of almond butter to my plate for some protein and healthy fats.  How satisfying!
