Pumped-Up Pumpkin Cookies

It’s humid and 70 degress.  It must be October in New England.

The trees line the streets in vivid shades of yellow, red, and orange.

Their leaves slowly fall to the ground, crunching under my feet as I run along each day.

While it may not feel like autumn, all the signs are there.  Before long the cooler temperatures will return and when they do, I will be ready.  I can’t think of many things to complain about during the short fall season.  I love the cool evening breezes, the bright colors, and the crisp mornings.  I love scarves and sweaters and boots.  I love apples and hot mugs of cider.

The smells of fall are so comforting – spicy cinnamon sticks, roast turkey dinners, homemade apple pies…and cookies!

This was a particularly delicious batch:

Pumped-Up Pumpkin Cookies

Ingredients (makes 18-20 cookies):

  • 3/4 c. whole wheat pastry flour
  • 1.5 c. old fashioned oats
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 T. water
  • 1 T. ground flaxseed
  • 1 T. butter
  • 1/4 c. granulated sugar
  • 1/3 c. packed brown sugar
  • 1/2 c. canned pumpkin
  • 1 egg white (or 3 T. liquid egg whites)
  • 1/2 tsp. vanilla extract
  • 1/3 c. dark chocolate chips
  • 1/3 c. chopped walnuts

Directions:

  1. Preheat oven to 375*.
  2. Combine water and ground flaxseed in a small bowl and set aside.
  3. In a large bowl, mix flour, oats, baking powder, and salt.
  4. In a separate bowl, cream together the butter, pumpkin, and sugar.
  5. Add egg white, vanilla extract, and flax mixture to the wet ingredients and mix well.
  6. Pour wet ingredients into the bowl with the dry ingredients and mix to form a batter.
  7. Add chocolate chips and walnuts to batter.
  8. Spoon batter onto a non-stick sheet pan.  The batter will be thick, so use the spoon to flatten the cookies.
  9. Bake for 11-12 minutes or until edges become crisp.
  10. Cool on a wire rack…or eat them hot out of the oven.  YUM!

These cookies puffed right up into beautiful rounds of whole grain goodness.  They were so versatile, too – a delicious dessert, tasty afternoon snack, and perfect pre-run fuel.  This batch didn’t stick around for too long.  I can’t wait to whip up another.  Maybe this time I’ll add some cranberries…so many options!

    I would say pecan pie, but that’s my favorite dessert ever and I would consume it all yaer long. So, I say apple crisp. DELICIOUS.

    Oats, pumpkin, and chocolate!!! All my favorite things!! I definitely want to make these. :)

    My favorite fall dessert would be…all of them! haha But…if I had to only pick one, I’d say my Mom’s (that part is important) apple crumb pie. Nothing says fall like being at my parent’s house and smelling that pie cooking in the oven… :)

    My favorite fall treat is pumpkin chocolate chip muffins mmmm. I’ve been making them a lot this season so these cookies will be a nice break. Even though they’re pretty similar ;)

    I seriously can’t get enough of fall. It’s so beautiful and I just love everything about it. My favorite fall dessert is pumpkin bread/muffins. I just mix a box of spice cake or carrot cake mix (not the eggs or oil) + 1 can pumpkin + 2 egg whites and bake according to the time on the box. It’s the easiest recipe ever!

    I love the Fall! I can’t say I have a favorite dessert but mostly because I become a fan of all things savory at this time of year. I am having a salad with roasted chickpeas and a pumpkin vinagrette for dinner and I am salivating all over my keyboard just thinking of it! (Now how’s that for a mental picture lol)
