Rain, wind, and temperatures in the sixties. August, where are you? Actually, it feels sorta nice to wear comfy jeans and a hoodie – hood on, of course! When wearing a hoodie, I must be eating something warm and hearty…preferably from a large bowl. Bowls make food more comforting. I decided to keep things super simple tonight. I broke out the pantry staples and whipped a batch of vegetarian chili with the randomness in the kitchen.
“It’s Chilly” Chili – serves many!
As I said, nothing fancy went into this pot. Just the goodies I always have on hand.
Fresh veggies – carrot, onion, bell peppers, and jalepeno.
Frozen veggies – corn and lima beans.
Canned favorites – black beans, kidney beans, and diced tomatoes.
Kickin’ spices – chili powder, cumin, and coriander, and cayenne pepper.
Everything went into a big ol’ pot that bubbled away until dinner.
Ingredients:
- 1 T. oil (canola, olive, grapeseed)
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalepeno, diced
- 1 c. frozen corn
- 1/2 c. frozen lima beans (optional)
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 2 cans diced tomatoes in their juices
- 1 c. vegetable stock
- 2 c. water
- 1 T. chili powder
- 1 tsp. cumin
- 1/2 tsp. coriander
- 1/8 tsp. cayenne pepper
The list seems long, but I guarantee you have most of it right in your kitchen. Go ahead and make yourself some chili!
Directions:
- Heat oil in large pot.
- Add diced onion, carrot, and peppers and saute until soft, but not browned. ~10 minutes
- Add tomatoes, spices, stock, and water.
- Bring to a boil and add frozen vegetables.
- Reduce heat and simmer for 30 minutes.
- Add beans, stir, and simmer for another 10 minutes.
- Eat up!
I love pairing chili with a tasty whole grain, so I scooped some brown rice into my bowl.
It quickly hid under a heaping serving of hot chili.
Topped with shredded cheese and hot sauce…with a couple of chips!
Dippity-do! I seriously cannot eat anything Mexican-inspired unless I have blue corn chips to go with it. There’s just something about those chips…and that chili! A match made in heaven! The family agreed, it was the perfect meal for a chilly night.
What do you crave on raw, rainy days? A warm bowl of chili hit the spot! If only I had some freshly baked cookies for dessert…hmmm…

Yummm. That chili looks great! I definitely crave warm, filling soups on rainy days. There’s nothing more satisfying than curling up with a bowl of chili. The mere notion of it makes me look forward to cooler fall weather. I’m done with this summer business!
On rainy, cool days I crave coffee! I am a huge fan of cold, rainy days, and I could actually use one right about now. Oklahoma is too hot!

On rainy days I crave warm foods too: usually I make tomato soup and grilled soy cheese sandwiches.

I love autumn vegetable soup or chili on a cool fall day. Fall is my favorite season and I can’t wait to ingest a lot of my fall comfort foods this year!!
Seriously, I’m in jeans and long sleeves today! But kinda feels nice. I heart chilli and it’s so easy to make and you get so many nights of leftovers.
