Crossing Things Off

  • Cook a tasty dinner.
  • Yoga.
  • Walk the dog.
  • Report cards.
  • Take a bath.

Yahoo!  I got it all done…and I got to bed at a reasonable time! The busier I am, the more productive I become.  I seem to focus, get my nose to the grindstone, and cross things off my to-do list.  Nothing makes me feel better than crossing things off!

I productive night began with a tasty dinner – burgers and fries.

For some reason, I’ve had a lingering craving for a black bean burger. I decided to change that tonight.

Black Bean Burger for One

  • 1/3 c. black beans
  • 2 T. salsa
  • 2 T. quick-cooking oats
  • seasonings to taste: salt, pepper, cumin, chili powder, red pepper

Directions:

  1. Place black beans in a bowl and mash with a fork.
  2. Add remaining ingredients and mix well.
  3. Form a single patty with your hands.
  4. Cook burger on skillet or grill at medium-high heat for a few minutes on each side.
  5. Eat and enjoy!

This burger was tasty and filling!  I wish I made a bigger batch, so I could have another for lunch today.  I topped my burger with some pepper jack cheese and salsa – a nice kick! – and paired it with some crispy sweet potato fries and a side salad.  I had myself a little mid-week BBQ!  I enjoyed eating and early dinner on the deck…

Then zipping off to yoga!  I ate early enough to have time to digest a little before class.  I made it just in time for a super relaxing hour of gentle yoga.  The class really loosened up my tight hips and hamstrings.  It was exactly what I needed!

I had my workout clothes on already, so why not walk the dog? My mom was home when I returned from yoga, so we leashed up the pups and covered two miles in the ‘hood.  Walking is a nice way to decompress after a long day.  My mom has been super busy at work, too.  We both had lots to say!

After walking, it was time to get down to business – report cards are done! That left me with plenty of time to take a long, leisurely bubble bath.  I filled the tub with warm water, epsom salt, and bubbles.  I turned on the jets, cranked up to tunes and closed my eyes.  It was perfect!

My body feels great this morning.  I gave it the royal treatment last night!  I also slept an extra hour this morning because it’s not a running day.  I also made a delicious pancake breakfast.

Banana – cottage cheese ‘cakes – how tasty!  I didn’t add any nut butter today because the cottage cheese amped this batter up.  With a drizzle of maple syrup, I was in pancake paradise!

Happy Hump Day! This week is flying by for me.  I can’t believe it’s already Wednesday!

    What a quick and easy black bean burger, I love it! It’s so funny because I never liked “burgers and fries” and now I eat veggie burgers and sweet potato fries aaaall the time =P

    I cannot tell you how much I love black bean burgers and your recipe looks fail proof! I’ll have to try! You’re quite the little chef.

    LOVE that simple black bean burger recipe. I always thought homemade veggie burgers were intimidating! I guess they don’t have to be. I’m impressed that you were able to accomplish so much after work. I always feel like there’s never enough time!

    Banana and cottage cheese!? That sounds ahhhmazing. And I love veggie burgers with sweet potato fries. That really is the perfect summer meal.
